Description
A soft, tangy, and homemade lime cake from scratch with fresh lime juice, zest, and a tender crumb.
Ingredients
1 cup unsalted butter, room temperature
1 1/2 cups granulated sugar
3 large eggs
2 tbsp fresh lime zest
1/4 cup fresh lime juice
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk or sour cream
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. Cream butter and sugar until light and fluffy, about 3–4 minutes.
3. Add eggs one at a time, beating well after each.
4. Mix in lime zest and juice.
5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
6. Alternate adding dry ingredients and buttermilk into the batter. Mix until just combined.
7. Pour batter into prepared pan and smooth the top.
8. Bake for 30–35 minutes or until a toothpick comes out clean.
9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
10. Frost or glaze as desired.
Notes
Use fresh limes for best flavor.
To keep it extra moist, brush baked cake with lime syrup before frosting.
